One of the biggest problems I’ve always had when trying to make a Specific Carbohydrate Diet (SCD) chocolate chip cookie substitute is that the homemade white chocolate melts intot he dough during baking. There was just no way to keep it solid.
Then I thought, why not try adding the white chocolate chunks after baking?
How do you keep the chocolate from melting?
I made my SCD white chocolate chunks, threw them in the freezer to get really solid then after cooling my skillet cookie a little bit, I pushed the chunks intot he warm soft cookie. They melted, but didn’t spread out into the cookie. When the cookie cooled the rest of the way, the melted candy solidified into perfect smooth chunks!
You know that texture when chocolate chips melt during baking and then solidify? Tha’t’s exactly what happened and it’s so good!
SCD White Chocolate Macadamia Nut Skillet Cookie Tips and Tricks
- To prevent the white chocolate chips from completely melting, it’s important to let the cookie cool slightly before adding them. This way, they will melt just enough to create a deliciously gooey texture without losing their shape.
- For a crispy edge, you can use a slightly larger skillet, which will spread the dough thinner and create a crunchier cookie.
- Don’t overbake the cookie. The center should be a little gooey, but the edges should be set and golden brown.
